OUR HERITAGE

At Vaquita Pinta, our story begins with a lifelong devotion to the land, the animals, and the art of traditional cheesemaking. Rooted in the rich agricultural heritage of Jalisco, Mexico, and now thriving in Washington State, our family brings over four decades of hands-on experience to every batch we create.


Our founder, Miguel Paz, a proud Jaliscan cheesemaker, has spent more than 40 years perfecting his craft; both in his own home kitchen and working across dairy farms throughout his life. Raised on farms and shaped by generations of tradition, he learned early that great cheese starts with patience, care, and respect for every step of the process. Today, that same passion lives on in every wheel, crumble, and slice we produce.


Located in Custer, Washington, and proudly packed by Grace Harbor Farms, we are a small, family-run business dedicated to bringing traditional Mexican cheesemaking to the Pacific Northwest. Every product reflects our roots, our work ethic, and our belief that food should tell a story.
